Last week, we had a very small break in this crazy heat wave we are having, so I was actually able to turn on the oven and do some baking! As a lover of all things Fall, I’m really struggling with this heat – I mean, it’s the middle of October!! Stop the madness! ?
Anyway, back to the baking. I modified this recipe for Double Almond Biscotti, swapping out the 1 cup of sliced almonds for 2/3 c. of dried tart cherries and 1/3 c. chopped raw organic almonds. The results are yummy and amazing. The key to this recipe is the almond paste – which is a staple for us when we make holiday cookies. The biscotti came out light, tart, and perfectly sweet – a great treat to have on this #nationaldessertday that won’t completely break your calorie bank! Yay!
