Pita Chip Nachos

What’s a girl to do when she wants to make nachos, but there are no tortilla chips in the house? Use what you have on hand instead! In my case, I had some multi grain pita bread hanging around. You could use any other type of flat bread, chip, or lettuce if bread is not your thing – the point is, get creative! ?

The following recipe serves one, so feel free to double, triple, or quadruple the amounts accordingly!

Pita Chip Nachos

  • 1/2 of a large pita
  • 2 tsp olive oil
  • 3-4 oz. grilled chicken, diced
  • 1/4 c. black beans
  • 3 slices of pickled jalapenos, diced
  • 1/4 c. grated cheese (I made it with sharp cheddar, but use what you like!)

Optional Toppings:

  • 1/4 c. greek yogurt
  • 1/4 avocado, sliced
  • 1 lime wedge
  • a handful of shredded lettuce
  • salt for seasoning

First things first, make your chips! Take the 1/2 of the pita and cut it in half. Now you have two triangles – cut those triangles open and now you have four triangles. Brush each one with a little olive oil, and sprinkle with salt. Pop them in the toaster oven and toast – but only for 3 minutes. I call this a pre-toast, ensuring that the end result will be nice and crispy.

After the pre-toast, place the pitas on a plate so you can assemble the rest of the ingredients. Top each pita triangle with the chicken, beans, and jalapenos. Then, grate the cheese over each pita. Pop them back into the toaster oven for approximately three minutes more, or until they reach your state of desired crispiness!

Serve/top with the optional ingredients of greek yogurt, avocado, a drizzle of lime, lettuce and a sprinkle of salt.
