Watermelon Cooler

What’s more refreshing than watermelon on a hot summer day? Nothing, my friends. Which is why I’m eating it almost everyday right now.  In addition to consuming it in it’s natural state, I’ve been experimenting with new ways to use it in the kitchen.  Hence, my previous recipe from earlier this month – my Watermelon, Feta, and Bacon Salad.  Here, I’ve decided to make a summer sippin’ refeshin’ drink with it – that you can also spike if you wish! Watermelon Cooler The deets: Watermelon Cooler (Serves 2)

  • 2 cups cubed seedless watermelon
  • 3/4 cup mint leaves
  • 2 cups sparkling water
  • 1 lime
  • 2 oz. tequila (optional)
  • ice cubes

What I did: First, make a watermelon and mint concentrate by mixing them together in a blender. Strain the mixture, and divide the concentrate into two glasses (you’ll need glasses that are at least 12oz).  Then, add 1 cup sparkling water and 1 oz tequila (if you are spiking yours!) to each glass. Squeeze 1/2 lime into each glass, add a few ice cubes, and sip, sip, sip all summer day. Watermelon Cooler
